The idea came to me during my many trips to Uncle Sam’s country. Gourmet and amazed by the diversity of breakfast dishes, I quickly developed a preference for the famous “pancake”. After several unsuccessful attempts to reproduce them in my kitchen, I was beginning to despair. But in 2008, I made a decision: to open a “crêperie” where you could enjoy real “breakfasts” like nowhere else.
So I spent two months in California and went back to school to perfect my English. My goal was to visit a few restaurants in the hope that they would reveal their secrets to me. With the secret of the real pancake in my pocket, I returned home with a head full of images of my future establishment. This one, as in Happy Days, would feature a 1950s decor never seen before in French-speaking Switzerland, and would naturally be called “Happy Days”.
